Yummmmmy in my tummy


Get ready for the best summer sandwich combo ever. Thank you Morucci's in Walnut Creek for the inspiration {and watering taste buds with every thought}. My girlfriend and I made these for lunch yesterday, and I tried to only eat half the sandwich as to avoid a food coma/food baby. Needless to say, I only made it the 20 minute drive home and couldn't wait to devour the rest.

What you'll need:
Fancy bread {we used small artisan rolls from Trader Joes} - warmed!
Crunchy lettuce
Pesto
Tomatoes
Fresh mozzarella
Dried basil
Olive oil + vinegar

What you'll do:
Warm the bread in the oven till slightly toasty and warm. Slice the tomatoes and top with a slice of mozzarella. Lightly drizzle with olive oil and vinegar, and dashes of dried basil. Flip the cheese slices over and let sit in the fridge for a while.
Slice the bread and smother each slice {or just one if you're not a huge pesto fan} with pesto. Add tomatoes + mozzarella and add lettuce for a nice crisp crunch.

Finally, stuff your face and don't feel bad about eating the entire thing.
